 
  
  Smoked Salmon Linguine w. Lemon Cream Sauce

 Ingredients
 - 1 lb linguine
- 8 ounces smoked salmon, packaged
- 1 lb button mushrooms, sliced
- 1 cup heavy cream
- 3 large shallots, finely chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 lemon, juice and zest
- Pinch of red pepper flakes
- Parmesan cheese for garnish, grated
Instructions
 - Bring a large pot of salted water to a boil. Cook the pasta until al dente. Drain and return to the pot. In a medium bowl, break up the salmon with a fork into small pieces and set aside. In a large skillet over medium heat, heat the butter and olive oil. Add the shallots and mushrooms and cook until soft, 6 minutes. Add the lemon juice, zest, heavy cream, and red pepper flakes and cook until warm, 3 minutes. Add the salmon pieces and cooked pasta to the skillet, tossing to coat. Season with salt and pepper and spoon into bowls. Top with as much parmesan cheese as you want 🙂
