Ingredients
  1. 1 cup Israeli couscous
  2. 1/4 cup olive oil, plus 1 tablespoon
  3. 2 garlic cloves, minced
  4. 1/2 pound frozen shrimp
  5. 1 teaspoon dried oregano
  6. 1/2 teaspoon crushed red pepper flakes
  7. 2 tablespoons red wine vinegar
  8. 1/2 head radicchio, chopped
  9. 1/2 cup feta, crumbled
  10. 1/4 cup fresh parsley, chopped
Instructions
  1. Bring a large pot of water to a boil and cook couscous according to package instructions. Drain and rinse with cold water. Meanwhile, place the frozen shrimp in a colander and rinse with cold water until thawed, 10 minutes. Pat dry with paper towel and sprinkle with salt and pepper. Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the garlic and cook, 2 minutes. Place the shrimp in the pan and cook until pink, 3 minutes a side. Add to a large bowl along with the couscous, remaining 1/4 cup olive oil, oregano, red pepper flakes, red wine vinegar, radicchio, feta and parsley, tossing to coat. Sprinkle with remaining salt and pepper and serve.
