Ingredients
  1. 8 oz soba noodles
  2. 3 chicken breasts, cut in half lengthwise
  3. 1 tablespoon olive oil
  4. 1/4 cup peanut butter
  5. 3 tablespoons sesame oil
  6. 3 tablespoons soy sauce
  7. 2 tablespoons honey
  8. 1/2 lime, juice
  9. 1 red bell pepper, chopped fine
Instructions
  1. Bring a large pot of water to a boil. Cook the noodles according to the package, reserving 1 cup of the cooking water. Drain and rinse with cold water. Season the chicken on both sides with salt and pepper. Heat the olive oil in a large pan over medium-high heat. Cook the chicken until browned, 7 minutes a side. Transfer to a cutting board and cut into 1/2 inch slices. In a large pot over low heat, whisk together the peanut butter, sesame oil, soy sauce, honey and lime juice until smooth, 2 minutes. Transfer 3 tablespoons of the sauce to a small bowl. Add the cooked noodles to the pot, tossing to coat. Add some of the reserved pasta water if sauce needs thinning. Serve the pasta in bowls, topping with the sliced chicken, red pepper, and reserved sauce.
