Ingredients
  1. 2 boxes cornbread stuffing or, 10 cups stale cornbread cut into 1 inch cubes
  2. 1 lb spicy italian sausage, casing removed
  3. 2 cups dried cranberries
  4. 1 large onion, diced
  5. 3 stalks celery, diced
  6. 3 clovers of garlic, minced
  7. 3/4 cup chopped walnuts
  8. 3-4 cups chicken stock
  9. 3 sprigs rosemary
  10. 10 sage leaves
  11. olive oil
Instructions
  1. Preheat oven to 350 degrees. Saute onions and celery in a large pan with olive oil until tender. Add sausage, break up and cook until it begins to brown (8 minutes). Stir in garlic and saute for another minute. Add walnuts, sage, rosemary and cook for another minute, then remove from heat. In a large bowl mix together cornbread, cranberries, and sausage mixture. Add chicken stock, a little bit at a time, until the bread is very wet. Transfer to ovenproof dish and bake for 30-35 minutes.
