Ingredients
  1. 2 medium jalapeños
  2. 1 14 oz. can chickpeas
  3. 1/2 cup corn, fresh or frozen
  4. 4 tablespoons olive oil
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon pepper
Instructions
  1. Preheat the broiler and place the jalapeños on a baking sheet. Broil on all sides until charred, 7 minutes. Let cool completely before slicing in half and removing the tops and seeds. Chop and add to a food processor along with the chickpeas and corn. Pulse until combined, steaming in the olive oil. Add salt and pepper and pulse once more. Transfer to a bowl and top with more corn and a drizzle of olive oil. Serve with tortilla chips for dipping!
