Ingredients
  1. 4 medium sweet potatoes
  2. 2 cups grapes, red
  3. 1 teaspoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon pepper
  6. 8 oz. goat cheese
  7. pinch of cinnamon
  8. pinch of nutmeg
  9. 2 tablespoons honey
Instructions
  1. Preheat the oven to 400 degrees. Prick the potatoes all over with a fork and place on a baking sheet. Place the grapes on a separate baking sheet and drizzle with olive oil, salt and pepper, tossing to coat. Place both baking sheets in the oven with the sweet potatoes on the top shelf. Take the grapes out after 20 minutes and the potatoes out after 50 minutes or when they are tender. Once the potatoes are cool, gently scoop out the flesh with a spoon, making sure to keep the potatoes in tact. Add the filling to a large bowl and mash with the goat cheese, cinnamon and nutmeg. Top with the grapes, remaining goat cheese crumbles and a drizzle of honey. Serve warm.
