Ingredients
  1. 1 lb spinach flavored linguine
  2. 1/2 oz. dried porcini mushrooms
  3. 6 tablespoons
  4. 2 teaspoons fresh parsley, chopped
  5. 1 cup pecorino cheese, grated
Instructions
  1. Boil water and cook pasta to al dente, according to package instructions. Meanwhile soak the porcini mushrooms in 1 cup hot water. Remove mushrooms from the water and chop, saving the water. In a large pan over medium heat, melt 2 tablespoons butter with 2 teaspoons pepper. Whisk in reserved mushroom liquid and simmer, 4 minutes. In a large bowl combined the cooked pasta with the sauce, adding in the mushrooms, parsley and cheese. Stir to combine. Serve with an extra sprinkling of cheese on top.
