Ingredients
  1. 12 eggs, hardboiled
  2. 1/2 cup mayo
  3. 2 teaspoons Dijon mustard
  4. 12 baby potatoes
  5. paprika
Instructions
  1. Bring a large pot of salted water to a boil and add potatoes until tender, 5-8 minutes. Meanwhile, in a medium bowl, mash together the yolks, mayo and Dijon and season with salt and pepper. Transfer to a ziplock bag and cut a corner with scissors. Once the potatoes are cooled, half each lengthwise. Pipe a heaping tablespoon of filling into the center of each potato and top each with a sprinkle of paprika.
