Ingredients
  1. 2 boneless skinless chicken breasts (cut in half lengthwise)
  2. 2 tablespoons olive oil
  3. 5 tablespoons butter
  4. 1/2 cup chicken stock
  5. 1/3 cup Parsley
  6. 1 lemon (juice)
  7. All purpose flour
Instructions
  1. Season chicken with salt and pepper and coat in flour. In a large pan over medium heat, melt 2 tablespoons of butter with 2 tablespoons olive oil. When butter and oil start to sizzle, add chicken and cook for 3 minutes on each side or until browned. Remove chicken and transfer to plate. Into the pan add the lemon juice, stock, and 3 tablespoons butter and bring to a boil. Return chicken to the pan and simmer for 5 minutes. Plate chicken and garnish with parsley.
