Ingredients
  1. 1 bunch collard greens
  2. 1 tablespoon olive oil
  3. 2 garlic cloves, minced
  4. 1 chorizo sausage, or 3 strips of bacon
  5. 3 cups vegetable stock, or chicken stock
  6. 1 tablespoon balsamic vinegar
  7. 1 teaspoon crushed red pepper flakes
  8. 1/4 teaspoon salt
  9. 3 cups vegetable stock, or chicken stock
Instructions
  1. Using a knife, remove the stems from the collard green leaves. Place the greens in a large bowl and soak with water. Dry with paper towel. Stack the leaves, roll and cut into strips.
  2. Heat the olive oil in a large pot over medium-high heat. Add the garlic cloves and cook, 1 minute. Chop the chorizo and add to the pot, cooking until browned, 7 minutes. Add the greens, balsamic vinegar, red pepper flakes and salt and continue to cook, 3 minutes. Add the vegetable stock, bring to a boil, reduce to a simmer and cover the pot. Continue cooking until tender, 40 minutes. The longer the leaves cook, the more tender they will get. Sprinkle the greens with salt and pepper to taste.
