Ingredients
  1. 6 eggs
  2. 1/4 cup mayonnaise, low-fat
  3. 1 teaspoon white vinegar
  4. 1 teaspoon mustard
  5. 1/8 teaspoon salt
  6. Smoked paprika for garnish
Instructions
  1. Add the eggs in a single layer to a large pan and cover with enough water so that 1 inch is above the eggs. Heat on high until the water begins to boil, cover and turn the heat to low, cooking for 1 minute. Remove from the heat and leave covered, 15 minutes. Rinse under cold water, 1 minute. Crack the egg shells and peel under cold water. Dry eggs using a paper towel. Slice the eggs in half lengthwise and add the yolks to a medium bowl. Mash the yolks with the remaining ingredients using a fork. Scoop a tablespoon or so of the mixture into each egg white. Sprinkle with paprika and serve.
