Dip
  1. 1 cup low-fat, plain Greek yogurt
  2. 2 tablespoons fresh parsley, chopped
  3. 1/2 cup crumbled blue cheese
  4. 2 tablespoons milk
  5. 2 green onions, sliced thin
Bites
  1. 2 cups quinoa, cooked
  2. 2 eggs
  3. 2 green onions, sliced thin
  4. 1/2 cup buffalo sauce (I used Franks)
  5. 1/2 cup shredded cheddar cheese
  6. 4 ounces low fat cream cheese
  7. 2 tablespoons flour
Instructions
  1. In a small bowl, combine all dip ingredients. Store in fridge until ready to eat with bites. To make the bites, preheat the oven to 350 degrees and spray 2 mini muffin tins with pam. Cook the quinoa according for the instructions on the box and make enough to have two cups cooked. Add to a large bowl along with the remaining "bite" ingredients and mix until well incorporated. Spoon about 2 tablespoons into each muffin cup and bake until golden brown and set, 15-20 minutes. Let cool for 5 minutes before removing from cups. Serve them warm with the cooled dip.
