Ingredients
  1. 1 cup real maple syrup
  2. 3 granny smith apples, peeled and sliced into eighths
  3. 2 cups flour
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon salt
  7. 1 teaspoon cinnamon
  8. 1 1/2 sticks butter, softened
  9. 1 1/3 cups sugar
  10. 3 large eggs
  11. 3/4 cup buttermilk
  12. 1 tablespoon vanilla extract
Instructions
  1. Preheat the oven to 350 degrees. Spray a 10 inch cake pan with pam and dust with flour, covering all sides. In a small skillet, bring the maple syrup to a boil. Simmer for 20 minutes on medium heat until thickened. Pour the syrup into the bottom of the cake pan. Add the apples, placing in circles around the pan. Combine the flour, baking powder, baking soda, salt, and cinnamon in a small bowl. In a large bowl beat the butter and sugar until fluffy, 5 minutes. Add the eggs, buttermilk, and vanilla until combined. Working in batches, add the dry ingredients and stir to combine. Pour the batter over the apples and smooth with a rubber spatula. You may have some leftover batter, just make sure the cake has at least 1/2 inch to rise. Bake for 60-65 minutes or until the top is browned and a toothpick inserted in the center comes out clean. Take out of the oven and cool completely, at least 45 minutes. Place a large plate on the top of the cake pan and carefully flip over. The cake should come out easy, just as mine did, just make sure and wait the full 45 minutes for the cake to cool.
