Bruschetta w. Pesto, Roasted Red Peppers & Feta

- 1 french baguette
- 3 tablespoons olive oil
- 1 cup jarred pesto
- 1/2 cup feta, crumbled
- 1 jar roasted red peppers, sliced
- Preheat oven to 400 degrees. Slice the baguette into 1/2 inch slices and arrange on baking sheet. Brush tops with olive oil and sprinkle with salt and pepper. Bake until browned, 8-10 minutes. Top each with a heaping tablespoon of pesto, feta crumbles and a slice or two of roasted red peppers.
